Andalusian Braised Pork Cheeks and Potatoes

Last year, my brother in law and I took a gastronomic trip to Seville, where we gorged on manchego, cured Iberian pork and tapas. Of all the tapas we had however, this Andalusian pork stew was what stood out the most. The pork was so tender, the sauce was incredibly rich, and the potatoes just absorbed all of that flavour. It was stunning. It took me a few goes to figure this one out, but in the end, I think I nailed it. If you ever find yourself in Seville, take a trip to Bar Baratillo, which does it the best in my opinion.

Turn cooking mode on

Step 1

Season the pork cheeks generously with salt and pepper. Get a heavy casserole on a medium-high heat with a good glug of olive oil and brown the cheeks hard on all sides. You want real colour here. Do it in batches if you need to. Take them out and set aside.
