Turn cooking mode on

Step 1

Heat a large pan until screaming hot with a good glug of olive oil, then add the lamb mince. Work in batches if needed so the lamb fries rather than steams. Brown it until deeply caramelised and plenty of fat has rendered out, then remove from the pan and set aside.
