Greek Style Spinach & Feta Pie

There are only two cuisines that could ever convince me to go vegetarian. Indian, and Greek. Because their vegetarian dishes don’t feel like substitutes for meat, they feel like the centrepiece. This is firmly in that camp. A naughty pie, laced with cheese and spinach, all wrapped up in layers of shatteringly crisp filo. One of the very few vegetarian dishes I keep coming back to. And every time I serve it up alongside a greek feast, THIS is what everyone talks about afterwards.

Turn cooking mode on

Step 1

Start by getting a pan on a low heat. Butter in, then the shallot and garlic. Let it tick away gently until it goes soft, sweet and jammy.
