Step 1

Take the beef out of its packaging and season it generously all over with fine sea salt. Place it on a rack or plate and leave it uncovered in the fridge for at least 2 hours, or up to overnight. This lets the salt penetrate the meat and dries out the surface, which helps it brown better.
