Start with the chicken. You can brine, but I don’t like the faff. Instead, salt it aggressively inside and out, using about double what you’d instinctively do. This isn’t about a salty skin, it’s about time. The chicken goes into the fridge uncovered so the salt has time to penetrate the meat, seasoning it all the way through and not just on the surface.
