Lamb Rogan Josh

Despite what autocorrect may have you believe, Rogan Josh has nothing to do with famous podcaster Joe Rogan. Instead, it's one of the most famous dishes in Kashmiri cuisine, with roots tracing back to Persian influences brought to northern India during the Mughal era. The name is thought to come from the Persian words roghan (oil or clarified butter) and josh (heat or passion), referring to its vibrant red colour and richly spiced cooking method. Traditionally made with lamb or mutton, Rogan Josh gets its signature colour from Kashmiri chillies rather than intense heat. Unlike many British curry house versions, authentic Rogan Josh relies less on tomatoes and cream, instead building flavour through yoghurt, aromatics and warming spices. For my version, I've stayed fairly true to those roots, using lamb shoulder on the bone, a yoghurt marinade and a long, slow cook to create a rich, deeply aromatic curry.

Method

Turn cooking mode on

Step 1

Mix together the yoghurt, spices, garlic, ginger and salt. Coat the lamb thoroughly, cover and leave to marinate for at least 4 hours, ideally overnight.

The ingredients say lamb shoulder but the instructions say lamb shanks?? Any weights?

Hey Emily. Thanks for catching that! generally you’re aiming for atleast 250g of meat per hungry person. I used a 1.5kg shoulder which had a shank at the end of the shoulder, which is why that’s in there, sorry! Will update now!😊
