What would you recommend as a replacement for the Mushrooms?

Hey Kelli! The mushrooms are there to bulk up the sauce rather than add lots of flavour so I would suggest another vegetable. Maybe 1 large carrot (grated or cubed) or a chopped leek!

I modified this recipe to turn it into a short rib stew, with dumplings on top - took out the mushrooms, added some carrot & celeriac (or parsnip). Also had some success with adding a splash of balsamic vinegar and a tiny amount of molasses (black treacle).
