Crispy Hoisin Pork Burgers

I think it’s safe to say that every meat eater on this planet LOVES crispy duck pancakes. Everything about them, the texture of the meat, the sweetness of the hoisin, the freshness of the garnish, it’s just a perfect bite. But I always find myself wanting more. Maybe that’s part of the beauty of the dish, but I’m a guzzler. Where people say “less is more”, I say “MORE IS MORE”. So in an attempt to capture the same satisfaction of a crispy duck pancake, but with the quantity of a cheap pulled pork, I created this. A pulled hoisin pork burger, loaded with crispy crackling and a cabbage slaw. To date, this is one of my favourite creations.

Method

Turn cooking mode on

Step 1

The day before, take your pork and lightly score the skin. Rub generously with table salt and place in the fridge uncovered overnight to dry out the skin.
