Sri Lankan Style Beef Cheek Curry

What does Joe Wicks and the Sri Lankan cuisine have in common? They both put coconut oil in absolutely everything. This recipe, however, is far from lean and takes a little longer than 15. It's a perfect example of how time and patience reward you with depth and flavour you simply can't achieve in a quick cook. The spices mellow and deepen, the collagen slowly melts away, and the beef becomes so tender it practically falls apart.
