Nolly’s Punjabi Chicken Karahi

You have to give credit where credit is due. Nolly, my wonderful grandmother from Punjab, is the sole reason I love South Asian food. From a young age, she exposed me to a whole plethora of different spices and aromatics, (while my English side favoured meat and veg), and it sparked my fascination for different cuisines and cultures. I don’t think I would have ever made my page without that exposure, and I don’t think Gather Round would exist either. This is a curry Nolly used to cook for us when we were younger. Like a lot of Punjabi recipes, it’s stripped back. Simple, but by no means inferior. This is a really beautiful, quick curry that’s just as satisfying as the usual suspects.

The amount of spice in the curry really allows all the flavours to come through but still gives it that extra kick which is what you want when having a curry
