Crying Tiger Sirloin Steak

I'd happily eat steak with nothing more than salt and pepper, but if you gave me one sauce to have with it for the rest of my life, it'd be nam jim jaew. It's sweet, sour, salty and spicy all at once, with toasted jasmine rice giving it this incredible nutty depth that somehow makes an already great steak taste even more like itself. It's one of those recipes that's far greater than the sum of its parts, takes about 10 minutes to throw together, and once you've made it, you'll probably find yourself drizzling it over just about anything.

Turn cooking mode on

Step 1

Salt the steak generously all over at least 2 hours before cooking, then leave it uncovered in the fridge to air dry. Take it out of the fridge around 30 minutes before cooking so it can come up to room temperature.
