Butternut Squash Mac & Cheese

This is what I cook whenever I have vegetarians over. A rich Mac & Cheese, laced with sweet, roasted butternut squash and mature cheddar. You can have it as a centrepiece for 4 or a side dish that serves 8.

Turn cooking mode on

Step 1

Peel the butternut squash, remove and discard the seeds, cut it into chunks and toss with olive oil and salt. Roast at 200°C until completely soft and lightly caramelised, around 35–40 minutes. Set aside.
