Creamy Prawn Linguini

I used to live with a serial dater, who I shall not name. They weren’t the most accomplished cook, but they did master one recipe, and it appeared on the menu every single time they had a date at home. This was it: a creamy prawn linguine, and it was genuinely delicious. Yes, it does have parmesan in it, which may offend the most sensitive of Italian palates, but it just works.

Turn cooking mode on

Step 1

De-shell and remove the vein of the prawns, but do not discard the heads. In a large pan, add a glug of olive oil and a heaped tablespoon of butter. Add the prawn heads and fry off for a few minutes. Squeeze the juices out of the heads into the pan, then remove the heads. You should be left with a rich red oil. In the meantime, bring a pot of water up to a boil and heavily salt it.
