Fish and Chips with Crushed Minty Peas

The day I first made this recipe back in 2023, I genuinely thought id found the lost arc of fish batter recipes. It's delicious and airy - almost like a tempura batter - and when you couple that with a really fresh piece of white fish, some crispy homemade fries and some minty, garlicky crushed peas, you end up with a plate of fish & chips better than anything you would ever find in a local chippy, or worse... a Mr Cod.

Method

Turn cooking mode on

Step 1

Season the haddock all over with the salt about 20 minutes before cooking to firm it up. Just before battering, dredge lightly in the flour and shake off any excess.
